Crèpe Pancakes

Serves 4

Always a winner, these crèpe pancakes are simple, quick, and delicious.


  • 300ml milk
  • 100g flour
  • 2 eggs
  • 1 tbsp olive oil (any oil will do)
  • Pinch of salt


1. In a mixing bowl, add the flour, eggs, oil and a pinch of salt.

2. Gradually add the milk to the mixture while whisking to form a smooth batter.

3. Bring a frying pan to a medium-heat and drizzle a little bit of oil into it.

4. After a few minutes, when the pan has fully heated up, add a ladle’s worth of batter to the pan and swirl the mixture in the pan to cover the base fully. Cook for a minute or so.

5. Once the batter has begun to set in the pan (no longer liquid), use a spatula to go around the edges of the pancake to pry it from the base and then flip it to cook the other side. Cook for another minute or so.

6. You’ll know when it’s ready.

Rinse and repeat for the rest of the mix, add your favourite toppings and enjoy!
